Brownies... the ultimate gooey, gunky chocolate sensation. But definitely NOT good for you.
Well not any more. These secret brownies are super-chocolatey yet light, gooey and cakey...and nutritious. The secret? Tofu! It replaces some of the eggs, sugar and butter. And you would NEVER know it was there! Tofu is a great low fat protein source. As well as containing all sorts of cancer protecting isoflavins and the like. I also find for some reason that they don't give me a nasty sugar high like other brownies.
You'll have to trust me on this one. I do not do worthy bakery. But I may, in this recipe, just have found a perfect compromise. I ate six today...I'm not sure if they're THAT healthy... ah well!
8 in 8 in square brownie tin, greased or lined with foil
Preheat oven to 350F / 180 C
Sorry Europeans but American brownies call for American cup measures!
6 oz (1/2 a standard pack) silken/ soft tofu
3 eggs
3/4 cup melted butter
1/2 cup soft light brown sugar
1/4 cup caster sugar
1 tsp vanilla extract
1 1/2 tsp baking powder
1 cup plain flour
3/4 cup cocoa powder
1/2 cup chocolate chips
1/2 cup chopped pecans or walnuts
Press the tofu between two plates or with your hand to extract the liquid it is stored in. Then whiz it up till smooth with a hand blender.
Add all other wet ingredients, mix to combine. Add dry ingredients. Stir again to combine. Add choc chips and nuts if using.
Pour into the prepared tin and cook for 20 mins. Check after 15. It should be risen a bit, firm to the touch, not wobbly, but as with all brownies, underdone is better than over!
Leave to cool in tin for 10 mins before cutting into 16 squares.

ReplyDeleteBecause in some brownie recipes huge amounts of sugar are used to make a fudgey texture, and because there is so little flour, the main constituent of the brownie is sugar! Whereas in these some of this is done by the tofu.
